PATE a Choux:
1/2 cup of water
1/2 cup of milk
pinch of salt
pinch of sugar
55 gr. butter
3 eggs
130 gr. flour
In a saucepan melt the butter on stove with milk and water. Take it off heat, and add the rest of the ingredients. Mix well, one egg at a time.
Once it is cooled, put in a pastry bag. Pipe 2.5 cm mounds onto the parchment paper.
Bake of about 20 minutes. Then remove form the oven and place on rack to cool.
Cut each one open from the middle and insert in each of them the cream and white chocolate mix you made:
125 gr. Double cream
150 gr. melted white chocolate
