Strawberry Trifle
I used this recipe from joyofbaking.com but instead of the lemon curd, I used combination of Mascarpone cheese + whipped cream + Greek yogurt and some honey. Turned out nice but the strawberries were not at their best. I will try it again mid-summer.

1.5 cups all purpose flour
Baking powder
1 Lemon zest, grated
½ cup of finely ground hazelnuts
2 tablespoons of sugar
2 eggs
1 tablespoon of Orange liqueur (Cointreau)
2 tablespoons of honey
2 tablespoons unsalted butter
2 tablespoons of canola oil
Vanilla extract
Preparation
Preheat oven to 190°C.
Sift together flour, ground hazelnut and baking powder into a bowl, then whisk in lemon zest.
Put sugar into the bowl and mix together with vanilla, honey, eggs butter, oil and liqueur until well combined.
Fold into flour mixture.
Spoon batter into each mold, filling them 3/4 of the way.
Bake until golden around edges, about 20 minutes.
Orange dessert
I made this orange dessert few days ago. Looks like it is going to be one of my regulars this summer. It is light and very easy to make.
I lined the ladyfingers soaked in orange juice and orange liqueur.
Then topped them with sweetened greek yogurt and whipped cream.
Decorated the top with some orange marmalade I made.
